The countdown to summer has begun! The days are getting longer, the weather is beautiful, and beach vacations are quite possibly all we can think about. Not to mention, all of the scrumptious food that coincides with the season. Now that it’s finally warm enough to fire up the grill, let’s get cookin’. Here are some of our favorite recipes for summer grilling recipes, including main dishes, sides, and dessert.
Grilled Caesar Salad
Who would have known that grilling lettuce could be so tasty? This untraditional salad recipe is sure to be a family favorite for years to come. It’s also very easy to make and pairs well with several dishes. Grilling simply adds wonderful flavor to those boring, healthy vegetables. All you need to do is take several romaine heads and drizzle olive oil and lemon juice over it and season with salt and pepper. Then, place them on the grill and cook for one to two minutes. After the lettuce is cooked, add dressing, cheese, and croutons.
Grilled Vegetable Pizza
For the vegetarians in your life, this grilled pizza recipe is healthy, easy and fun to prepare. Simply take a pre-made pizza crust and top it with goat cheese, scallions, and sliced tomatoes. Place the pizza on the grill for about ten to fifteen minutes. Right after cooking, add fresh baby spinach and avocado.
Tequila Grilled Shrimp
Why not spice up a classic seafood dish with a little tequila? First, stir together shrimp, tequila, lime juice, and orange juice in a bowl. Then, place the shrimp on the grill for four to six minutes and season with salt and pepper. The end result is a flavorful dish that you can make over and over again this season.
Cheese Stuffed Burgers
This summer, add a new twist to your favorite hamburger recipe: Cheese! All you need is a few ounces of your favorite soft cheese, such as Brie or blue cheese, to transform this American classic. Simply shape cheese into eight equal-sized disks and press a small hole in the center of each beef patty. Then, place the cheese into the burger and wrap the meat completely around the cheese. You can look forward to that rich, tasty surprise once you finally get to bite into the burger.
FYI, your favorite summertime vegetable is even better on the grill. First, shuck the corn and then add olive oil and place the husks on the grill for about 20 minutes. For even more flavor you can top the corn with cheese, old bay, barbecue sauce, or herbs.
This recipe doesn’t involve any grilling, but it’s the ultimate healthy summer dessert and we just had to share. Not only does this dessert taste amazing but it is also beautiful, given all of the vibrant colors in the fruit. In a small bowl, mix ricotta, cream cheese, honey, and vanilla together until combined. Then, spread the mixture onto your watermelon slices and add berries, mint, and toasted coconut. Voila!
